Carrot Cake
Ingredients:
Cake
- 2 cups of flour
- 2 tsp of baking powder
- 1 tsp of baking soda
- 2 tsp of cinnamon
- 1/2 tsp of nutmeg
- 1 tsp of salt
- 3/4 cup of sugar
- 3/4 cup of brown sugar
- 3 eggs
- 3/4 cup of vegetable oil
- 1 tsp of vanilla
- 2 cups of grated carrots
- 1 cup of pineapple juice (canned)
- 1/2 cup of chopped pecans
Icing
- 1 x 8 ounce package of cream cheese
- 1/4 cup of butter
- 1/2 tsp vanilla
- 1 cup of icing sugar
Instructions:
- Grease and flour one 13x9 inches or 2x8 inches pan
- Mix dry ingredients
- Mix eggs, sugar, oil and vanilla. Pour over dry ingredients. Stir until just moistened, then add carrots, pineapple and pecans.
- Spread into prepared pan
- Bake at 350° for 40 minutes, let cool
- Spread with icing
