Carrot Muffins
Ingredients:
- 1 cup of flour
- 1/2 tsp of baking soda
- 1 tsp of baking powder
- 1/4 tsp of nutmeg and all spice
- 1/2 cup of brown sugar
- 2 eggs
- 1/2 cup of olive oil
- 1 tsp of vanilla
- 2 carrots (grated)
Instructions:
- Preheat oven to 350 degrees
- Sift dry ingredients
- In a mixer, beat eggs and sugar until fluffy. Add remaining wet ingredients
- Fold carrots in, just until combined
- Bake for 15-20 minutes
