Carrot Muffins

Ingredients:

• 1 cup of flour
• 1/2 tsp of baking soda
• 1 tsp of baking powder
• 1/4 tsp of nutmeg and all spice
• 1/2 cup of brown sugar
• 2 eggs
• 1/2 cup of olive oil
• 1 tsp of vanilla
• 2 carrots (grated)

Instructions:

• Preheat oven to 350 degrees
• Sift dry ingredients
• In a mixer, beat eggs and sugar until fluffy. Add remaining wet ingredients
• Fold carrots in, just until combined
• Bake for 15-20 minutes
